Warming sake is a unique drinking experience because the taste and structure change, especially when you want to combine sake with hearty dishes, warm sake can make beautiful sake-food combinations. In the past, the idea was that you should always drink sake hot, but nowadays we know that most quality sake comes into its own when served cold. The idea of heating comes from the fact that we used to only have cheap sake where the inferior quality was disguised by heating. When you are in Japan, you generally even have to specifically ask to be served sake warm.

When asked if there are also premium sake that can be heated, we can be short and clear, yes. Which sake is suitable for heating depends on a number of things, but usually these are sake that have a lot of dairy and grain tones, the Junmai and Honjozo varieties. In general, they are slightly drier types and usually they are more robust, with Yamahai and Kimoto brewed sake in particular catching the eye. Exceptions are some Koshu(aged sake) who are sweet and can be wonderful served warm.

Watanabe Shuzo is a small family owned brewery in the Nasu region of northern Tochigi Prefecture. Founded in 1892 by Eisaku Watanabe, whose family had long brewed sake in Niigata Prefecture, the brewery began in a rented storehouse on a farm. In 1912, it moved to its current site in the Susagi area of Otawara City.
