Honda Shoten (Hyogo)
Naoshima Kome Shochu - 720ml
Naoshima shochu, brewed by Honda Shoten in the Hyogo prefecture, undergoes a unique aging process. This authentic shochu is initially aged in the brewery and then transported to the Ikuno Ginzan Silver Mine. There, it undergoes year-round aging at a constant temperature of 13 °C. The composition of Naoshima shochu consists of 50% polished Yamada Nishiki rice and sake lees from quality Daiginjo sake. The result is a shochu with a luxurious, soft aroma reminiscent of fresh Daiginjo sake, and a clean finish that accompanies a deep and rich flavor.Notably, the pure gold leaf comes from recycled electronic scrap from Mitsubishi Material, collected in the Netherlands and then transported to Japan. In the Naoshima refinery, this gold is further melted, adding a distinctive and sustainable dimension to the production process of Naoshima shochu.

Watanabe Barrel Aged 3yrs Kome Shochu is made from the finest sake lees and matured in barrels for over three years. It carries a rich fragrance of vanilla and coconut, balanced by a mellow, elegant taste. Despite its 35% ABV, the aroma remains clean and refined. Key Features: Ingredients: Produced exclusively from Watanabe’s highly polished Ginjo- and Daiginjo-class sake lees (rice polishing ratio 55–18%), creating a distinctive fruity aroma of apple and pear. Yield: 300 kg of sake lees produces only about 20 litres of shochu per distillation (35% ABV), meaning just 0.72 litres per 10.8 kg of lees—making it exceptionally rare. Ageing: Matured for three years in a variety of casks under the supervision of master blender Yamazaki: Mizunara: deep, rich flavour with a spicy note. Sherry: rich aroma, full body, lingering finish. Brandy: noble and layered. Bourbon: smoky character with sweet vanilla. American white oak: toasted vanilla profile. Watanabe Sake Brewery, founded in 1850 in Hida Furukawa (Gifu), is one of Japan’s foremost artisanal breweries. Known as part of the “White Wall” district of historic kura, it was named Best Brewery in 2021 and has since earned international acclaim.
