Futsu-shu is regular sake, a type of table sake that makes up about 70% of all sake that is made. Much of this sake is mass produced where eventually the yield is increased by adding distilled alcohol, glucose, amino acids, lactic acids and water. Because the sake produced approximately doubled in quantity, used to be three times larger without restrictions, it is often the cheap simple sake. Usually no special sake rice is used and the production process is mainly or entirely mechanical, computer-controlled and fast. There are many exceptions to everything regarding sake, as is the case with this. Many small sake breweries in areas such as Nagano, Tochigi, Fukushima, Niigata and Gunma make very refined Futsu-shu. In addition, there are breweries that downgrade sake with a polishing value below 50% from Daiginjo to Futsu-shu by adding just a little more than the legal amount of 10% brewer's alcohol. You can almost see it at these breweries as the super Tuscan wines with grape varieties that were not allowed in Tuscany at the time, making them table wines.

The judging panel of
the International Wine Challenge (IWC), the world's largest and most
authoritative sake and wine competition, was held in Yamagata Prefecture from
May 13 to 16 2018r, and it was announced that Hourai Watanabe had won the
Gold Award, Gifu Prefecture Trophy, and Great Value Sake in the ordinary sake
category. This is the third consecutive year that the Gold Award has been
awarded.
"Komachi Sakurabetsu Enclosure" broke through the difficulty of 6% in
the ordinary sake category and won the gold medal for the third
consecutive year. In addition, it won the "Gifu Prefecture
Trophy" and "Great Value Sake", which are given to
particularly outstanding brands among the gold awards.
IWC 2018 overcame the
difficulty of winning 6% in the ordinary sake category, was selected as one of
97 brands, and won the gold award for the third consecutive year. In addition,
