Warme sake is een unieke drinkervaring doordat de smaak en structuur verandert, zeker wanneer je sake wil combineren met stevige gerechten kan warme sake mooie sake-spijs combinaties opleveren. Was in het verleden het idee dat je sake altijd warm moest drinken, inmiddels weten we dat de meeste kwaliteit sake het beste tot zijn recht komen wanneer deze koud worden geserveerd. Het idee van het verwarmen komt omdat we vroeger alleen goedkope sake hadden waarbij de inferieure kwaliteit werd verbloemt door het verwarmen. Wanneer je in Japan bent moet je over het algemeen zelfs specifiek vragen om sake warm geserveerd te krijgen. 

Op de vraag of er ook premium sake zijn die verwarmt kunnen worden kunnen we kort en duidelijk zijn, ja. Welke sake geschikt zijn om te verwarmen hangt van een aantal zaken af maar doorgaans zijn dit sake die veel zuivel en graantonen hebben, de Junmai en Honjozo soorten dus. Over het algemeen zijn het iets drogere typen en meestal zijn ze meer robuust waarbij vooral Yamahai en Kimoto gebrouwen sake in het oog springen.

Kyokuko Junmai 88 Kimoto - 720ml
Kyokuko Junmai 88 Kimoto is brewed with Tochigi Sake 14, a rice variety developed by the Tochigi Prefectural Agricultural Experiment Station and designed specifically for sake brewing. Lightly polished and prepared in the kimoto style, it displays a deep umami character balanced by refreshing acidity. This sake is particularly well suited to being served warm. Watanabe Shuzo is a small family-owned brewery in the Nasu region of northern Tochigi Prefecture. Founded in 1892 by Eisaku Watanabe, whose family had long brewed sake in Niigata Prefecture, the brewery began in a rented storehouse on a farm. In 1912, it moved to its current site in the Susagi area of Otawara City. As the relocation took the brewery further east, the brand name was changed to Kyokuko, meaning “rising sun.”
