Taru sake is aged on taru or cedar wood and is actually written as taruzak. It is a group of sake with light tannins, a distinctive scent of cedar wood and many are very nicely priced. Most are simple sake such as Futsu-shu, Honjozo or regular Junmai but there are also exceptions such as special vintage taru sake. Unfortunately, there are still people who serve a beautiful refined sake in a cedar wood box, a Masu. When you do this, you have created your own taru sake in a few minutes, but this wooden box is intended for ceremonies like the Kagami Biraki Ceremony and it is better to leave the making of this type of sake to the breweries.

Wood aged is sake that has aged in barrels that have often already been used for aging other alcoholic beverages such as wine and Whisky, so that a marriage takes place between the two spirits.

Tsukasabotan’s Taru Honjozo is crafted with traditional techniques handed down through generations, allowing the cedar barrels to impart their character to a crisp, dry Honjozo sake. The sake reveals a refined balance of cedar aroma with a light, dry and clean profile. When tasted, a gentle spread of woody fragrance appears—subtle yet present—followed by a solid, rich flavour with natural depth. It can be enjoyed chilled, at room temperature, or warmed, and pairs particularly well with dishes such as wild vegetables and mushrooms. Founded in 1603 in the Tosa region, Tsukasabotan Brewing Company uses underground water from the Niyodo River, one of Japan’s clearest rivers. Legend tells that sake brewed with this water was once offered to the gods. Across the centuries, Tsukasabotan has placed quality first; even during wartime rice shortages, the brewery reduced production volumes rather than compromise, securing its reputation as a respected national brand.

Kikumasamune Taru Junmai sake - 720ml
Kikumasamune Taru Sake is a Taru Sake, on Yoshino Cedaren barrels. The sake is dry, elegant with something tannin and a delicate cedaroma. Enjoy this sake in combination with miso marinated cod or eel with a kabayaki sauce. This sake comes into its own when it is served cold in a white wine glass.

NINKI Taru Junmai Ginjo - 720ml
NINKI Taru Junmai Ginjo is traditional fermented in a Japanese cedar-wood tank. Aged again in a fresh cedar barrel to infuse aroma. Nose is full of delicate cedar, melon and pear, well balanced palate with lots of flavours and some tannin. The finish is long, pleasent and vibrant.Best served cold in a wine glass.

Kyokuko Yamahai Cedar Barrel Junmai Ginjo - 720ml
Kyokuko Yamahai Cedar Barrel is a unique taru sake in many respects. It is a Junmai Ginjo sake with fine fruit notes and subtle hints of cedar and pepper on the nose. The use of the traditional Yamahai yeast starter imparts the sake with beautiful acidity on the palate, creating a well-balanced flavour with almost no residual sugars. The sake has a long finish, allowing the delightful taste to linger beautifully.This sake is best served cold in a wine glass

Watanabe (Tochigi)
Kyokuko Rosso Kimoto - 720ml
Kyokuko Rosso Kimoto is one of the most extreme and unique sake produced in Japan. Rosé or red in this case makes it special. Kimoto starter is a very ancient way to make a yeast starter which gives normal a higher acidity to the sake. Polishing ratio of 99% so the rice has been milled down only 1% is extraordinary since almost all rice for sake producing will be polished at least 10%. Adding oak maturating for a year which is seldom used for sake adds to another unique aspect of this sake. If you are not into sake please do not try this but if you are and like rough, Umami, oak and unique Flavors this might be your pick. We tried this at tastings and people either loved or hated it but everyone agreed on one thing, this is more than extreme extraordinary. Best served cold or room temperature in a wine glass. Dishes full of Umami like cheese are great in combination with this sake.

Miwatari Connection Wine Barrel Aged Junmai Ginjo - 720ml
Miwatari Connection Wine Barrel Aged Junmai Ginjo is another example of a perfect marriage between wine and sake. The sake is aged for 6 months in oak barrels that previously contained Merlot grapes. The result is stunning, a beautiful light rosé colour, lots of red fruit clearly in line with the scent of a typical beautiful Merlot wine. Soft tannins, lots of umami and a wide spectrum of flavours and scents complete this sake that has an intriguing and long finish. The sake is a unique accompaniment to light meat dishes but can also be drunk alone. It is best to serve this sake cold in a Bordeaux glass or sake glass.

Choryo Jukusei Yoshino Taru Sake 1992 is an attractive Amber colored cedar wooded sake that is eliminated for a long period at low temperature. This undiluted sake brewed of no less than 30 years old has a unique rich robust scent and soft mild taste. Brewed in Nara by Choryo Shuzo one of the better sake brewers in the region. The sake can be served during a dinner but is also beautiful with dried figs, chocolate. The sake is best served cold or room temperature in a wine glass.

Masuizumi Super Special is a very unique and exceptional sake! The Masuizumi Super Special Junmai Daiginjo is brewed by Masuizumi and matured in oak Chassagne-Montrachet barrels previously used by Domaine Ramonet for their white wine. Try this sake chilled first and enjoy how its rich flavour evolves as the temperature rises. An elegant taste influenced by the oak barrels, with notes of vanilla, nuts, and a delicate, rich, complex depth. Layers of dried currants, honey, and caramelised orange peel add great depth and character. Dry, with a medium to full-bodied and powerful flavour, depending on the serving temperature. This sake is best enjoyed in the special Sophienwald sake glass.

Link8888 Chivas Regal Casks is a very limited sake made by Masuizumi in Toyama. Of course, the sake is aged in ex-Chivas Regal vessels that have been shipped from Scotland to Japan, but they also went one step further and brought the blendexpertise of Chivas Brothers. Link 8888 is a mix of Sake made with Yamadabo, Yamada-chiki Sake rice and Kuromai, a kind of brown rice. Each sake was matured individually in American white oak barrels of 12+ years ex-Chivas, and later mixed to create link 8888. The 8888 in the name refers to the fact that the Masuda Toyama brewery is 8,888 km away from the Strathisla-Distillery of Chivas Regal in Kieth, Scotland.Best to serve this sake alone with your nearest family or closest friends at room temperature or cold.To enjoy this wonderful sake fully it is best served in the special ISOS sake glass from Sophienwald.
