New: WSET Level 2 Award in Sake

WSET, the world’s largest drinks education provider, has introduced the new English-language WSET Level 2 Award in Sake. We are proud to be the only Approved Programme Provider in the Netherlands offering this course.

The three-day programme is ideal for sake enthusiasts and aspiring professionals. Around 30 sake will be tasted while topics such as production methods, styles, ingredients, techniques, and labelling are covered. The course concludes with a 60-minute exam.

We also offer the English-language WSET Level 1 Award in Sake (one day with 10 sake) and the WSET Level 3 Award in Sake (four days with more than 40 sake, including prior home study, mock exam, and theory exam).

It is brewed as a sake that pairs well with both Japanese and French cuisine. "Pétillant" refers to the light small bubbles in the sake created by the natural carbon dioxide produced during fermentation which are s retained in the bottle. Watanabe (Tochigi)

Kyokuko Sparkling Kijoshu - 375ml

Kyokuko Sparkling Kijoshu is complete different from any other sake with bubbles through the unique Kijoshu brewing method. With this special method, a full powerful sweet sake is created with a very nice balance between the sweet on the one hand and the acids in the sake on the other. A sublime lush sake with bubbles is the result. Nice mousse, nice fruit in the nose and on the pallet, lots of umami and a fantastic fine aftertaste. When brewing sake, the Moromi tank is normally filled in three steps for four days. The first day the tank is filled for 1/6 with the yeast starter, steamed rice, koji rice and water. The second day is not done anything, the third day the quantity in the tank is doubled, then 2/6 steamed rice, Koji and water is added. The fourth day this amount is doubled with the addition of 3/6 tank of steamed rice, koji and water. With the Kijoshu method, the fourth day of sake is added instead of water, making the sake much sweeter and fuller after fermentation than with the normal method.This sake can be served with desserts but also as a apertif.This sake is best served cold in a flûte.

Tsukasabotan’s Taru Honjozo is crafted with traditional techniques handed down through generations, allowing the cedar barrels to impart their character to a crisp, dry Honjozo sake. When tasted, a gentle spread of woody fragrance appears—subtle yet present—followed by a solid, rich flavour with natural depth. Founded in 1603 in the Tosa region, Tsukasabotan Brewing Company uses underground water from the Niyodo River, one of Japan’s clearest rivers. Legend tells that sake brewed with this water was once offered to the gods. Across the centuries, Tsukasabotan has placed quality first; even during wartime rice shortages, the brewery reduced production volumes rather than compromise, securing its reputation as a respected national brand.

Keiryu Asa-shibori Shuppin is a limited-edition sake that is brewed and stored in the same way as the brewery's special competition sake. It's a popular sake among sake connoisseurs, as it brings out the original umami, sweetness, and acidity best of sake. The sake ferments at a low temperature for three days longer than usual, eventually bringing the alcohol content to 20%. It is bottled and immediately stored on ice as soon as it is pressed early in the morning. Concentrated and juicy, well balanced with mild sweetness, white peach, berries, persimmon. Creamy texture and a spicy aftertaste. Scampi with garlic is a dish almost not to combine with wine, but this sake does the match seamlessly. Watanabe Shuzo is a small family-owned brewery in the Nasu region of northern Tochigi Prefecture. In 1912, it moved to its current site in the Susagi area of Otawara City. As the relocation took the brewery further east, the brand name was changed to Kyokuko, meaning “rising sun.”

Houka Vintage 2025 Junmai Daiginjo is a limited-edition sake with only around 428 bottles released, presented in an elegantly designed 720ml bottle. Brewed from three sake rice varieties grown in Nagano Prefecture—Kinmon Nishiki, Yamada Nishiki and Takane Nishiki—it carries the signature of the brewery’s pasteurisation method, which preserves a subtle gassy character. The sake is then aged for about six months at low temperature, developing into a refined and distinguished Junmai Daiginjo.Toshimaya Brewery in Nagano has been producing artisanal sake since 1891 on the shores of the mystical Suwa Lake. With an annual production of just 1700 koku, it is a true craft brewery led by Toji Komatsu Yukio and guided by the vision of the young president. The brewery uses water sourced from Mount Hachi Buse, carefully balancing minerals such as magnesium and potassium to suit the yeast starter. The rice is cultivated locally by contracted farmers, creating a strong bond between the growers and the brewer, a connection proudly celebrated in the tasting room where the farmers’ portraits are displayed. Alongside classic rice types like Miyama Nishiki, Yamada Nishiki and Kinmon Nishiki, local varieties including Takane Nishiki, Shirakaba Nishiki and Hitogokochi are also used. The brewery is further distinguished by a private collection of Samurai armour housed in a hidden museum and has earned repeated gold medals at the International Wine Challenge.

Watanabe Hourai (Gifu)

Hourai Super 18 Junmai Daiginjo - 720ml

Hourai Super 18 Junmai Daiginjo is created from Yamada Nishiki rice of the highest grade, harvested in the Miki region of Hyogo Prefecture. The grains are polished to just 18%, leaving only the pure core shaped like a crystal sphere. With complete dedication, the mash is brewed and carefully pressed at low temperature using the traditional momen shibori method. The sake is pasteurised early in the bottle and preserved at zero degrees to maintain its finesse. Because of its fragile nature, it should always be stored in the refrigerator at a temperature of six degrees or lower. Allow the sake to warm gently to around twelve degrees for ten minutes before drinking, and discover how its aromas and flavours transform as the temperature rises. Watanabe Sake Brewery in Gifu is the maker of this refined sake. Established in 1850 in Hida Furukawa, the brewery belongs to the historic White Wall district, where traditional breweries with white façades stand side by side along a narrow canal. Following the title of best brewery in 2021 and the many international awards that followed, Watanabe has been recognised as one of Japan’s finest. With a growing focus on the global market, their sake now carry both Vegan and Kosher certification.
