Tsukasabotan Brewing Company, opgericht in 1603 in de Tosa-regio, brouwt met ondergronds water uit de Niyodo-rivier, een prachtig kristalheldere rivier die goed bekend is in Japan. Volgens de oude legende werd sake die met dit water werd gebrouwen, als offer aan de goden. Gedurende haar lange geschiedenis is kwaliteitssake iets waar het bij deze brouwerij altijd om draait. Toen tijdens de Tweede Wereldoorlog een landelijk tekort aan rijst toesloeg, koos Tsukasabotan ervoor om de kwaliteit te behouden door het productievolume te verlagen, een stap die goed werd ontvangen en het bedrijf hielp uitgroeien tot een nationaal bekend merk.
