De Kodama-brouwerij werd in 1879 opgericht in de pittoreske stadje Katagami, in de prefectuur Akita, ten noordwesten van Japan. Het familiebedrijf produceerde eerst sojasaus en miso-sojabonenpasta, basiskruiden in de Japanse keuken, voordat het begon met het brouwen van sake in 1913. De productie van deze hoogwaardige "gefermenteerde" voedingsproducten, vertegenwoordigd door "Yamakyu" -merken, blijft nog steeds een belangrijk onderdeel van de activiteiten van de Kodama-brouwerij.
De regio is gezegend met rijst van hoge kwaliteit en vers, schoon bergwater, hebben de generaties een gerenommeerde expertise in het brouwen van sake gekoesterd en ontwikkeld. De eeuwenoude, arbeidsintensieve Kimoto-methode wordt nog steeds gebruikt om Taiheizan's pure rijst super premium en premium sake te brouwen.
De toji Saruta-san werkt al bijna 40 jaar bij de brouwerij en heeft tijdens zijn carrière vele onderscheidingen ontvangen, waaronder jaarlijkse nationale sake-wedstrijden en gouden prijzen in internationale wedstrijden.

Taiheizan Kimoto Junmai has a rich round taste and smell of grain and rice. Nice structure with lots of umami and then a long finish.
Ideal supervisor for dishes that have a lot of Umami.
This sake is best served cold in a guinomi or warm in an O-Choko.

Taiheizan Chogetsu is a beautiful traditionally
made sake with a delectable aroma of white spring flowers, white peach and
grapefruit. A very fine hint of sweetness on the palate. A long aftertaste of
white flowers, vanilla and subtle stone fruit. A smooth, creamy texture and
taste, with accents of green banana, yogurt and roasted grains. Delicious with
Italian dishes such as Pizza with lots of vegetables and cheese. This sake is
best served cold in a white wine glass.

Tenko 20 Junmai Daiginjo is very limited available. According to the brewmaster from Taiheizan it is the most challenging and same time rewarding sake they have ever made. Using all their enormous knowledge and experience to create this perfect sake. Fully made by hand and cared for during the entire production, "Tenko 20" is a sake to share with a special person on a special occasion. The soft aroma pulls you in and the taste speaks of fruity freshness with a crispy texture. Simply divine.This sake is beste served cold or at room temperature in the special Sophiienwald sake glass.
