Mitsutake Kimagure Dragon Kijoshu was created through an intricate brewing process that was long forgotten but revived in 1974. In contrast to building up the fermentation in the tank with only water, there is already an addition of 50% sake instead of water during fermentation. The result is a lush, full-bodied, sweet sake that can often easily age for more than 20 years, but is also super tasty and interesting when fresh. Full, sweet and insanely complex.
