Zenmai Ginjo is a 100%
rice Ginjo which is very special. Ginjo means that the sake is specially brewed
with a characteristic lot of fruit and floral notes in the nose and on the
pallet. A small amount of brewer's alcohol has been added, not to increase the
amount of sake. In Ginjo, the alcohol is added because certain flavours in rice
dissolve better in alcohol than in water. So the sake gets extra flavour from
this addition. Brewer's alcohol is usually a distillate made from sugar cane,
grain or potato, but with this sake it is rice.
A delicious accessible sake with fine red fruit, apple and melon in the nose and on the pallet. The taste is formidable with a nice bite and a pleasant aftertaste.
