De Doi-brouwerij, opgericht in 1868, bevindt zich in de schaduw van het Takatenjin-kasteel in de prefectuur Shizuoka. In de loop van 4 generaties heeft de brouwerij haar reputatie opgebouwd als een eersteklas ginjo-kura. Tot het onverwachte overlijden van hun meesterbrouwer, Shokichi Hase, een van de vooraanstaande meesterbrouwers van het Noto Toji-gilde, stond de heer Hase meer dan 40 jaar aan het roer van de productie van Doi Shuzojo. Zijn leerling heeft na een lange leerperiode het brouwen overgenomen en blijft de kwaliteit handhaven die de brouwerij wereldwijd zo beroemd heeft gemaakt.
