Iwa 5 Junmai Daiginjo is a super special sake limited available.
Made by former 'Chef de Cave' by Dom Perignon, Richard Geoffrey, who has long had a great love for Japan and his culture. For him it was an easy and natural switch from Champagne to Sake. With the help of his blending skills, IWA Sake 5 is a mix of three different rice variety: Yamada-nishiki, Omachi and Gohyakumangoku. No less than 5 differences of the yeast species, including 2 wine ferment are used to complete this special belnd.
I have its origins in a rice field on the Shiriwa site, in the city of Tateyama, which also inspired the name of the brewery. Shiraiwa means 'white rock' and Iwa means 'rock'. The five elements that are also referred to in the name are rice, yeast, origin of the rice, the yeast increase method (Moto) and the fermentation process. It is different from all the other sake that you have tasted before - a must for every sake enthusiast. Wide and deep. This sake with umami complexity with a whole series of flavors such as pear, mint, lemon zest, almond, herbs, tea, apple, roasted honey, woody and cheese-like hints that dance on a perfectly balanced acidity.
This sake is best consumed in the special Sophienwald sake glass.
