Hakkaisan Sparkling Nigori is a subtle light sparkling sake with soft bubbles and one side -like structure. Due to the second fermentation in the bottle, there is a fine amount of small rice particles such as sediment that provides an extra taste sensation. The Sake has fine light fruit in the nose and taste, beautiful acids and a lively aftertaste. 

Not only is the Hakkaisan Sparkling Nigori Sake extremely suitable as a refreshing aperitif, it is also appropriate to serve with a complete Japanese meal. When you ask a Japanese for the top 10 best Sake Breweries, Hakkaisan is the name that, together with Urakasumi from Miyagi, almost always appears on their list. Even at the basic sake of this brewery (Futsu-shu), the rice is already topped for 40%, which is equal to the requirements for a Ginjo Premium Sake. The water for this sake is known as Raid-Sama No Mizu What does water from the God Raiden. It is fresh melt water that flows from Hakkai mountain.

Hakkaisan Brewery Company, opgericht in 1922, ligt aan de voet van de berg Hakkai in de prefectuur Niigata. Het bronwater dat uit de bergen stroomt, wordt gebruikt om zijn sake te produceren. De leidende principes van de brouwerij zijn om de beste sake te produceren waar men nooit teveel van zal hebben, om de hoogste productienormen toe te passen op al haar sake. De Brouwerij staat erop om in kleine batches te produceren, met behulp van handgemaakte koji en langzame gisting bij lage temperaturen. Dit om de kwaliteit hoog te houden zoals men deze over de wereld wilt brengen.
